Little Andorra Welcomes Mertcan Dogusgen!

Mertcan Dogusgen is a new chef to Melbourne’s restaurant scene. A Turkish chef with global experience, he comes to Little Andorra after two years as Jnr Sous Chef at Attica. This appointment at Little Andorra marks Mertcan’s solo debut, and his food is defined by his ethos: utmost respect for ingredients and maximum attention to detail. Mertcan’s cooking honors tradition while reaching for something new.

His Turkish culture is important to him, and the flavours and techniques of Anatolia and the Aegean are of constant inspiration. Utilising local suppliers, growers and producers, Mertcan works with ethical produce and regard for the region and its season. This food is a deeply personal creative expression, and like Mertcan’s personality, it speaks of positivity, generosity and kindness.

Mertcan’s approach to the kitchen is uniquely shaped by his upbringing. Raised in a professional basketballing family, he translates the competition of the court to his cooking process: “On the court you compete against another team. In the kitchen, there is no opposition, so the competition is with yourself. You need to break out of your comfort zone, and keep moving forward every day.” It is with this mentality that Mertcan builds a new menu for you to enjoy and commences his journey at Little Andorra.
